The Passion:

With a long-standing passion for distillation, master-distiller Eric considers energy conservation and environmental matters a top priority.

He combines traditional French know-how with an innovative low-temperature distilling technique. This technique has the double-benefit of both economizing energy and, as a result of gently working the raw ingredients, preserving the maximum flavour of the malted barley.

The Place:

On the outskirts of Saint-Jean-en-Royans, the Vercors Distillery sits at the foot of the Vercors mountains on a 1673 farmstead. In the center of the property grows the 225-year old giant sequoia for which our whisky is named. With views of the lush Royans Valley and the spectacular limestone cliffs of Combe Laval, the Distillery offers easy access to the wild Vercors Regional Natural Park.

The Ingredients:

In the fields surrounding the Distillery, Anne-Hélène grows organic barley used to make our 100% homemade whisky. All barley used for our two other high-quality whiskies is sourced from organic European producers.

A fresh-water spring flows directly from the Vercors to the Distillery grounds. This pure and fresh water is ideal for producing our high-quality French whisky, adding to its unique terroir.

The Process:

Everything happens right here at the Distillery: growing, brewing, fermentation, distillation and bottling. 

We started up our stills in 2016. Our first single malt whiskies will be ready in 2019…
